feat: Seitenanordnung je Notizbuch (Issue #30, Schritt 1)

Ob ein Notizbuch Seite für Seite oder durchgehend angezeigt wird, steht
jetzt im Manifest (`layout`). Beim Anlegen ist „Feste Seiten“
vorgewählt; im ☰-Menü lässt sich die Anordnung des offenen Notizbuchs
umschalten. Notizbücher ohne Angabe behalten die frühere globale
Einstellung, ältere App-Versionen ignorieren das Feld.
